Do you ever find yourself opening your cupboards, or refrigerator looking for something that would help you pass your “hunger” stage? Well, that seems to happen to me often and usually I try to munch on something healthy.
Since I am a moody eater, I can crave either salty, sweet, or fresh things to much on.. and I guess these seeds are perfect if you’re craving something salty.
I love this recipe; It is simple, easy and perfect for a late night snack. It originated when I felt hungry around 9 PM and wanted to binge on something that was of-course salty.
I have made it several times already… not only to feed my late night cravings, but also entertaining my guests, or using to top salads. I have become smart at keeping some on hand inventory of pepitas/pumpkin seeds in my freezer, so that way I am ready to make and satisfy my salty mood instantaneously at whatever time it hits.
Recipe
Ingredients:
- 2 tsp smoked paprika
- 1 tsp salt
- 1/4 tsp cayenne
- 1 tbsp extra virgin olive oil
- 1.5 lb pepitas or pumpkin seeds
Directions:
Preheat oven 425 degrees
Evenly lay the pepitas, or pumpkin seeds on a baking sheet. Bake in the oven for about 7 minutes, or until you hear some popping sounds coming out of the oven.
Combine the nuts with the smoked paprika, salt, cayenne and olive oil.
Ready to serve!!!
