My daughter Anabelle loves pancakes, but then most kids do as well. It’s become our Sunday morning ritual to make pancakes for breakfast. I recently bought an electric griddle to help the pancake making process easier for her. She’s been having so much fun with the new griddle. She has been trying to make pancakes in all different sizes.
Since I thought they were all so cute and perfect in their own way, I decided to form it into a big tower of pancakes and showcase her creation. My husband, Mosses helped with the idea of inserting a wooden skewer in the middle to hold these puppies together for a quick pic of these beauties.
Eating them were the most fun of all! For some reason the smaller pancakes layered on top of each other as 4 tiers, tasted better than a single large pancake. As much as the photo might look like we spent hours in the kitchen, we were probably there for 20 minutes. I suggest when you get the chance to try it with your kids at home. It’s super fun and the perfect treat for a special Sunday.
The recipe we use is very simple, but also very good.

Serves 4 to 6
Time: 20 minutes
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 2 eggs
- 2 to 2.5 cups milk (until you feel that the flour has incorporated with the liquid mixture)
- 1 tbsp melted unsalted butter
- cooking butter spray, butter, or oil
Preheat a griddle or large skillet over medium low heat while you make the batter.
Mix together the dry ingredients. Beat the eggs into 3 cups of milk, then stir in the butter. Gently stir this into the dry ingredients and mix enough to moisten the flour mixture.
If your skillet or griddle is non-stick, you can cook the pancakes without any butter. Otherwise, use either a cooking butter spray, butter, or oil each time you add batter. When the butter foam subsides or the oil shimmers, ladle batter onto the griddle or skillet, making any size pancakes you like. In our case, Anabelle started making large size pancakes, then reduced it to medium, to small, then to extra small.
Brown the bottom in 1 to 2 minutes. Flip when pancakes are cooked on the bottom — one way you will notice they are ready to flip is when they are showing bubbles on top of the batter. Cook until the second side is lightly browned and remove from griddle to a plate. Repeat the process until you have no more batter left.
To assemble the towers, layer the pancakes from large to very small and secure with a wooden skewer. Top with a strawberry and top with your favorite sauce and dig in.
We loved having our pancakes with Agave syrup, but you can have it however your heart desires.
